987 Vincisgrassi

Just tried 'Googling' it - there seem to be hundreds of recipes for Vincisgrassi - all different

I tried googling it as well, the recipes I looked at did not fit the description of a lasagne layered with a chicken, mushroom and beef sauce.

ciao sano [vincigrassi le marche version of the lasagne but much better, here goes

recipe for up to 10 people
you will need
900g of fresh spinach
3 eggs
150g of parmesan cheese, grated
1 tbsp breadcrumbs
2 lge aubergines, cut into slices approx 5mm thick
1lb 450g of porcinni mushrooms sliced
6 small thin courgettes
lasagne sheets to cover
bolognese ragu
fontina cheese thinly sliced
salt pepper
freshly grated nutmeg
olive oil
seasoned flour for dusting

wash the spinach, put it in a pan with just the water clinging to its leaves and cook for a few minutes until wilted. Squeeze out all the excessliquid, Cop roughly and mix with 1 egg 30g of grated parmesan and nutmegand salt to taste..Stir in the breadcrumbs to give a binding consistencythen form the mixture into small balls. heat some olive oil for deep frying and fry the spinach balls until golden brown. drain on paper towels and set aside.

lightly beat together the remaining eggs.Dust the aubergine slices with the flour dip them in the beaten egg and shallow fry until golden. Drain and set aside. shallow fry the porcini then season with salt and pepper.

cook the whole cougettes in boiling waterutil just tender and drain.

pre heat the oven to 200 c

take a deepbaking tray/dish and spread a 1/3 of the ragu sauce to cover the bottom of the dish cover with a layer of lasagne thena 1/3 of the fontina cheese and parmesan and half the aubergines and mushrooms.
add more sauce and another layer of lasagne then arrange the whole boiled courgettes on top length wise.Cover with 1/3 of the cheese and the remaining aubergines and mushrooms.Finish with layer of sauce then the spinach balls and the remaining cheese. Bake in the oven for 30 mins until golden brown on top. remove leave to set for 10 mins before cutting into squares and enjoy. ciao marco
