I use
Italian Cooking
The definitive encyclopedia of fabulous Italian food
Capalbo - Whiteman - white - Boggiano
It is well thumbed, and the recipes are superb. The 125 page introduction is excellent too, covering everything from pasta - through fruit & veg - to liqueurs (and lots, lots more).
Published by Anness Publications under the name of Island Books.

There is a very good new cookbook on the market called, "Classic Italian Cooking, Recipes for mastering the Italian kitchen", by Valentina Harris.
It's published by MQ Publications Limited
It's written in simple terms, with easy to follow directions. I find it a great reference guide and these classic recipes are delightful!

Thanks! Will add it to my wishlist.
