Brillaint, thanks everyone.....like all the ideas....crispy veg with a dip sounds good ...as do all of them...shall try them all at some stage...and I'll check out the 1000 recipes ! :)

One of the nicest appetizers that I have had, though not Italian, was served at a party in London:
It consisted of thin slices of pears that were sprinkled with brown sugar and placed under a grill for just a minute or two to caramelise them. These were then placed on tiny pieces of brown bread with slices of brie on top that had also been popped under the grill for a minute to glaze the cheese. Some assembly was required at the table but they were delicious.

I dragged in one of my Italian cookbooks that has a good range of vegetarian or almost vegetarian antipasti recipes in it and will post up a few under a new thread later. Might be something in there that can help you for Saturday.

well
you could grill some aubergines and then cover them with chopped parsley, garlic and olive oil.
Or you could quickly boil them in water and vinager and salt, then drain them and cover them with olive oil, parsley and garley. best made the day before.
Grill peppers, put them in a plastic bag to cool. peel them add some garlic, olive oil and anchovies.
Zucchine in carpione is also a winner, the recipe is somewhere in the forum.

fiori di zucchine in pastella (zucchine flowers fried in batter)
if you have zucchine flowers you could also fill them with a mixture made of cooked zuchini, ricotta, parmesan, 1 egg and some nutmeg and parsley. Then put them in some whisked egg and breadcrumbs and fry.
a classic frittata di zucchine, or frittata di cipolle also works well.
if you have very small zucchine you can make a salad with the zucchine sliced very thin, mint, olive oil and lemon juice. some parmesan flakes would work well.
you could mix filadelfia chese with different fresh herbs, salt and olive oil and make a cream that can be eaten with fresh vegetables.
Bruschette always welcome, easy in a barbecue you can toast the bread on the grill
you can mix in a fodd processor some mozzarella, mayonese, a drop of olive oil, salt and pepepr to taste. spread on bread and put under the grill for a few minutes to melt the chesse. lovely.
