1146 Italian Barbecue ?

Has anyone got any ideas for an Italian Barbecue....i.e Marinades etc. :)

Fish marinated in lemon and parsley, or fish rubbed with cracked pepper, paprika, lemon rind and parsley (rub in olive oil first to get this to stick).

Bagged chicken/fish/potato also great - use tinfoil for the barbecue - wrap up a piece of fish/chicken, potato/etc with onions, seasonings of your choice, seal and leave to bake for about a half hour - very nice.

Also, if you have access to paw paw or banana leaves (if not can use foil again) you can wrap up decent chunks of meat/veggies, with a bit of water or oil and seasonings, and bury these in the coals (once they have burnt down a bit) to cook - a popular one that I know of is using squash with seasonings, make little individual packets, and set to bake in the coals.

Also, spatchcock chicken is lovely with a honey and soy marinade.

Here's my recipe for a delicious marinade:

Chop up any of the following veggies very fine and saute them on a medium heat in a good extra virgin olive oil to bring out their natural sugars :

Onions, Shallots, garlic, peppers (all colors) and mushrooms (all kinds)
Let this mixture cool to room temperature.

Add salt, freshly grated pepper, fresh basil (very finely minced), red pepper flakes and lemon zest. Mix well.

Finally add a very good aged balsamic vinegar and half the amount of extra virgin olive oil.

Pour into a large plastic bag that seals on the top and add the meat. Massage the meat in the marinade. Put the marinading meat in the refrigerator.

Marinate meat over night until it is needed the next day. Take meat out and let it get to room temperature before grilling.

Take the remaining marinade to the stove, add a little more aged balsamic vinegar and simmer over med high heat until the mixture has reduced and has thickened a bit. Use the marinade to drizzle over the grilled meat.
