you will have to put Uk plates on it and export it to Italy - we tried to get rid of an old car with Uk plates to a neighbour but he would have had to pay 1000 euros to re register it in Italy - so it remains as a burglar deterrent on the drive

In order for the owners of the car (presumabaly they are Italian) to insure it in the UK, they would have had to reregister the car in England and supply their local insurance company/broker with a UK reg for the vehicle. They would also have to supply a UK address. You should find out how long they have had the car in the UK.
If you can get a look at the car's documents, see if there is a UK address listed for the vehicle. If there isnt and it's still an Italian address on the Log book, and they are in the UK for a period of time, then there is something wrong. If it is an Italian address and the vehicle has a UK reg, call the licensing authority that issued tax for the vehicle and see if their records tally with the info on the document. This should tell you if everything is above board.
If it is and you take the vehicle to Italy, and if you are going to leave the car in Italy, technically, you should reregister it in the area that you will be living/keeping the car. You do have an amount of time to do this, I don't know what it is, but the insurance will probably be your main issue.
Your english insurance company will only insure you to be outside of England for a certain period of time. There are in the UK however, at least 2 companies that will give you insurance to go to Italy and insure you while you are there. I don't know if they'll cover you to leave the vehicle there. The ideal for you is that they would be willing to insure the car until you have Italian reregistration and Italian insurance lined up.
On that note, i will be reregistering a UK car in Italy in January. The figure of €1000 that's been mentioned to do this scares me! Can anyone please be a bit more clear about the procedure & costs involved in registering a car in Italy, getting Italian plates & getting road tax?

By the way...if the car still has the Italian plates available to it and if it's log book still has an Italian address on it, then in reality, you could buy the car, drive it to Italy, put the Italian plates back on and then do the paperwork to change the ownership to you...presumably having bought the car in Italy!!! Pay your road tax and save money on the reregistration.

if you want you can buy a lhd from a dealership in the uk ,and then bring that over and take it from there,thats the option we took

I would be extremely wary. The previous owners would have needed to 'take the plates off', and to return them to the relevant authorities (motorizzazione and PRA) to officially export or scrap the car. Until the plates were returned and the forms filled in the car has still been liable for Italian road tax. There sounds something fishy about this - it certainly isn't simply about insurance.
