You can use their calender feature to find out exactly which days Ryainair flies to these airports. And yes Bari is a good alternative, just a bit up the coast from Brindisi. You could catch the train from Bari to Brindisi too.
I should also add, due to their close proximity, you could fly into one airport and fly out from the other. Just book two single fares instead of a return flight.
Ryanair normally has a summer and a winter schedule, here in Abruzzo they cut the number of flights per week from 7 to 3.
You will find most areas are similar, I think the winter schedule runs from Oct to March.
Sorry if your Christmas is messed up, maybe there is an alternative airline/airport you could use for the days you want.
