For us celiacs, growing up in a country with such an informed healthcare system would have saved many of us years of misery. This is exactly why I picked up my whole life and moved from the US to Italy ... because of my celiac diagnosis, not in spite of it. Unlike in the U.S., in Italy, the gluten-free diet has never become a fad. It has remained what it was always intended
