3618 Stoccafisso Del Frantoio

A wonderful dish served in and around Cartoceto is oven baked dried cod with olive oil fresh from the press.
Cut the cod into small pieces and put in a bowl with salt, pepper, chilli, parsley garlic and olive oil.
Peel and chop potatoes and put in another bowl with salt, pepper, parsley and garlic.
Cut tomatoes in half and cover with salt,pepper, garlic,parsley and breadcrumb mixture.
Line a dish with greasproof paper and build layers of the cod, potatoe and tomato mixtures. End with a tomato layer.
Add olive oil, white wine and water until fully covered then cover pan with a lid and cook in the oven for 2 hours.
Delicious.
Serve with bruschetta dipped in oil from Cartoceto and wait for the taste buds to explode.

Just a tiny detail for anyone who has not cooked stockfish, stoccafisso or baccala - you need to soak the fish in a number of changes of clean water to get rid of excess salt, and to soften it up, before you cut it up to use it in the delicious recipe above!

Good point relaxed, I take it as normal but then not everyone has perhaps used this ingredient before.
