Your lemons are probably not yet quite ripe, leave the ones with green spots another month or so and just use the yellow ones first. However, the color of the peel is not necessarily a reliable indicator of ripeness, but surface 'shine' is. Glossy lemons are ripe, even if they are still green or have green spots. Don't forget to leave a few lemons on the tree even longer and they will sometimes turn almost orange in colour and become much sweeter - excellent. Most varieties will stay on the tree for many months slowly getting larger and just developing thicker skins.

Before leaving your lemon tree having cut that lemon you have been saving for your Christmas G & T check if the trees are also looking a little yellow.
Yellowing leaves are generally a sign of iron deficiency. You can buy a chelated iron product and this should be mix with water and then watered in.
I tried using this as a foliar feed but it damaged the developing lemons - they developed brownish black spots.

Just a thought this last year has been very dry, very dry and this may have had an effect
