If the cars are old enough wonder if it would make sense to sell them. Older cars [Euro 0,1 and 2 I think] can be traded on new car purchases for the government program. I almost bought an old car to trade in.

Julie, just out of mild curiosity, can I ask why you have chosen this method to raise money for your charity? Does the rally/drive have some relevance to the charity? I assume it is not an environmental charity! ;-) Sorry, but a 1200 mile car drive, car scraping and flight sounds like an unusual way to raise money for a charity! No offense intended.
A couple of years ago we scrapped a UK reg car in Le Marche - it was all pretty straightforward and the scrappy was obvioulsy following a set procedure - presumably the same will apply to Rome/Lazio.
We had to prove ownership - the UK log book was acceptable and to prove identity. We, as residents, had to provide Carta d'identita and Codice fiscale, presumably a passport would do. They took address details but I am afraid I can't remember whether we had to have proof of address as it would have been on the Identity card anway. They recorded all the car's details including chassis number and registration and I think that was about it. We were issued with a certificate, a copy of which we sent to DVLA. It might be worth checking with DVLA whether anything has changed and double checking what they need. We also had to pay E50.
Car scrapyards are called "Autodemolizione" I don't know of any in the Rome area but if you search on PagineGialle.it and put in 'Roma' and 'autodemolizione' something should come up - there are bound to be plenty as judging by the news reports every weekend they are sadly never short of customers!
Good luck with the rally - which charity are you supporting.
