The ruin that we are looking at has now collapsed so much that nothing other than a complete new build will do. Which does have some advantages on building costs and on the layout of rooms, window sizes and positions, etc., even though we will still be limited to working within the existing square metres.

This is also an interesting blog of a chap who was a builder in the UK and their experiences building a house in Italy. It highlights many of the do it yourself difficulties.
You could contact them and ask their opinion.

Are you talking about building (new-build) from scratch, or doing your own major restoration of a ruin? I have some experience of the latter in Italy, but none of the former!
