The quaint little town of Amatrice (Lazio) will be hosting a celebration of a much beloved pasta dish this weekend: amatriciana.
And we’re talking real amatriciana here! It was in fact in this borgo in the province of Rieti that the authentic recipe for pasta all’amatriciana was conceived.
If you happen to be in the area and attend the festival, you will have the chance to learn all the secrets of this dish, from the choice of the right ingredients to the ideal wine pairing, from pecorino production to how to roll the dough by hand.
You will also be able to taste several other dishes and products of the Italian tradition at the many booths, attend workshops led by professional chefs, and be entertained by music, acrobats, and even a poetry contest!
“Amatricianazionale” takes place May 10 and 11. Admission is free.
