these are normally called "pianelle".You can find ,but not always,these at good builders merchants ( they have them when they can get them) however always from builders merchants you can now get new ones (still hand made) looking old.It's advisable to use these firstly because you can get them easily,they cost less than old ones,they are more resistant and better made than the old ones which in the middle of a pallet load you will surely find one's that are broken ,damaged some even prone to disintegrate and worse case scenario that you may not find enough of the old ones which very often require intensive cleaning as they've often been whitewashed in the past.The old ones due to stress and roof movement have often become arched which makes the builders sweear whilst laying them....

Hi manopello -
I've no knowledge as to where to get them, but if you're talking about the flat tiles which are visible from the inside, my understanding is that they are called [I]mezzane[/I], which I think is the plural form.
