10010 grapes

hi all

We bought the vineyard next to our house last year and this is the first year we have tended the vines. We've done some of the work ourselves and had some help too. We're not that bothered about making wine, we just wanted to preserve the vineyard because it's beaautiful. We are going to have A LOT of grapes soon, any suggestions for cooking/preserving/using???

You can dehydrate the grapes and make raisins. The easiest way would be the traditional one, drying them in the sun. You can also use the oven or there are special dehydrators that you can buy.

I make a grape cordial,its very simple, wash grapes and place in a large saucepan, bring to the boil, ( no added water, no sugar) simmer for 10mins, strain and when cool bottle and keep in the fridge, it can be diluted to taste with water or a fizzy wine. I use both our white and black grapes for this.

You can also bottle home-made grape juice, simply run the grapes through a food mill, strain & boil in a hot water bath until the jars or bottles seal. No need for preservatives or sugar. We have a canning set up outdoors in the "summer kitchen" on a wood-burning stove (tons of wood), the kind of job you want to do early in the morning or late in the evening. In February you'll be glad you did!
