1719 Almond Liqueur - Amaretto Flavour

This is especially for Lyn in Puglia ... with her glut of almonds ;)

ALMOND LIQUEUR
(“Amaretto” Flavor)

MAKES 2 CUPS (I would increase the quantities to make more as I really like amaretto).

1 pound, shelled almonds
2 cups, (cheap) vodka
1/2 vanilla bean
1/2 cup, sugar
1/4 cup, water
1 teaspoon, vanilla extract
1/2 teaspoon, glycerin (for texture) Can be bought from a farmacia.

Coarsely chop the almonds (not too fine, for best results). You will have about 1 1/3 to 1 1/2 cups, chopped nuts.

Combine the nuts, vodka and vanilla bean in a one-quart glass jar with screw-on lid. Shake to mix and set the jar aside in a cool, dark place for 10 days or more.

Strain the mixture through a fine sieve into a 4 cup glass measuring cup (discard the strained-out solids). Rinse the original glass jar and the sieve very carefully, then place a damp coffee filter in the sieve, place the sieve over the clean jar, and strain the mixture through the coffee filter back into the jar.

In a small saucepan, combine the sugar and water. Bring to a boil, stirring until sugar dissolves, then continue boiling for 2 minutes (you will have a clear syrup). Remove the pan from the heat and allow to cool to room temperature.

When the syrup us cool, add it to the jar with the strained almond mixture, and add the vanilla and glycerin. Seal the jar and shake it gently to blend the contents. Transfer to attractive containers if desired.

Keeps for up to 3 months before flavour starts to dissipate.

Lovely drunk on it's own with ice or poured over ice cream.

Going on from this theme has anyone got a recipe for the lemon liquer...the lemons trees are heaving again ...we had some with coffee at a neighbours the other morning ( decadent eh ?? ;) )...delicious :) ...oooh and an orange one for a bit later ( loads of blossom on the orange/mandarin trees )....what a brilliant idea...make all our own liquers !!! ...saves wasting the fruit !! ..just bought peach,plum and cherry trees to add to our fruit orchard .

wow, my mouth is watering at the thought. And removal day is getting ever closer. We'll be there with you soon!

Can't wait to try the almond brew, Lynn. Make sure you make loads and bring some on New Year's Day!!

Midnight Espresso

Ingredients:
1* Part(s) Vanilla Vodka
1* Part(s) Kahlua Coffee Liqueur
1* Part(s) Frangelico Hazelnut Liquor
1* Part(s) Baileys Irish Cream
1* Part(s) Espresso

Instructions:
Equal parts of the liquor and use a lot of ice in the tin; hot espresso will melt the ice and dilute everything rapidly--you can let the espresso chill some, just make sure it is fresh. Shake vigorously and should be nice and frothy. Garnish with chocolate sprinkles, etc. if desired.

Normal vodka will do, or pop a vanilla pod in the chilling coffee, quite good for perking up a long party.

Enjoy girls, I'll be there in spirit and toast you at the witching hour :D

In summer I quiet liked Mambos which is Kahlua and icey chilled mik, bet its nicer with a bit of Frangelico or expresso :D

Just spent half hour in Farmacia trying to buy the glycerin for this recipe !
They were not very happy to sell it to me despite me having a copy of the recipe with me !!!..and even now I'm not sure if I've got the right thing !!!

They have given me Glicerolo F.U. and kept asking me if I wanted it for a laxative !!!! :eek: .....No...says I ...just to make an almond drink....they looked at me like I'd gone out !!!! :rolleyes:

Do Italians not normally use Glycerin....or is it illegal to make liquers.. :confused: ..no it can't be....I have some friends whose Mum makes limoncello !!!....is there an alternative way to make the liquid thick ?..or can I use the Glicerolo ????

If anyone can enlighten me as to what all the fuss was about I would be grateful.
I didn't dare ask for the 100 % pure alclohol for the limoncello recipe ;) ...can I buy that anywhere else !!!

I've drunk plenty of Amaretto (almond liqueur) in my time ... is one of the components a laxative? Who knows. At times my hang-over has been so bad, it's difficult to say. Meaning I usually blame any adverse symptoms on something I've eaten.

I tried looking up Glicerolo F.U. in the dictionary and on the internet. Plenty of information on the net, although it would appear to be all medical stuff in Italian and it doesn't make it clear if this is just like glycerin (that you can buy from a chemist in the UK) or something else.

Not sure that I'd risk adding it unless confirmation if forthcoming.

Legally however, I'm sure it's not a problem. You are not distilling alcohol, only adding flavouring.

On my last trip over - I noticed that my local 'Ipercoop' sells it [or rather the 95% proof stuff] - so try your local large supermarkets - in the booze section

If you make an Almond Liqueur and add a bit of a Cherry Liqueur ( I have put a Cherry Liqueur recipe in the Kahlua thread) you get this wonderful mix. Cherry and almond together is divine

First batch on the go.....just shelled 2lb almonds ..oooh me hands !!! Is there a use for Almond Shells...might as well use as much of the crop as I can !!!!

Couldn't find a Vanilla Bean either ...had Green or Bortlotti in the cupboard :D ...didn't think they would enhance the flavour so just put a couple of drops of vanilla in .....now we wait !!!! :cool:

Thanks for the tip re ; alcool puro...so pleased I haven't got to go back to the chemist till next month when I get my prescription....I expect i shall always be known in there as the mad English Woman who puts laxative in her drinks !!!!

May try the Cherry one with the next batch .......mmmmmmmmmm! I hope you realise i can't actually drink very much of this stuff...too much sugar ...just doing it for the love of it....and it is rainiing today !!! :)
