Here's another Michelle,
I like using it chopped up cold, matchstick size with chopped up crisp apple.
I only add some mayonnaise (see Paola's recipe), and a little salt and pepper.
It's a root vegetable, has a little celery flavor (to me).

Next time you mash potatoes - add a celeriac to the spuds when you put them on to boil, and mash it up with the rest. A slightly different taste, and surprisingly good.

celeriac can be used to make a mash, half boiled celeriac, half boiled potates... or a nice cream of celeriac soup!
it is also delicious sliced very thin and fried in a batter...

Like Kohlrabi - best eaten raw to enjoy the unique flavour. However it goes very well mixed with mashed potato as indicated above.

Celeriac soup with blue cheese is fab - best to use chicken stock if you're not a veggie but good veggie stock will do - add in a chopped spud too to make it smoother, Boil the cut up and peeled celeriac with an onion and a spud in the stock add small amount of any crumbled blue cheese and a good slug of single cream, salt and pepper at the end before blending. Serve with hot crusty bread..

Definately tastes of celery I agree Dee. The recipe also works well with celery but you need to sweat it in butter first or its too fibrous.

I will always remember my first visit to the Louvre, not for the art but for my discovery of the celeriac salad in their café :D Absolutely scrummy!

Thanks everyone, we tried the celeriac soup with the blue cheese, delicious. I won't fret next time we get celeriac in our organic veg box, so many ideas to try and a gorgeous soup as a fail safe. Thanks again:)

Celeriac tastes good - but I have only eaten it in one way - that is shredded or grated with carrot (again shredded) and then dressed in oil/vinegar. Goes really well with a nice bistecca and green salad.
