The satellite that shows Rai 1 2 & 3 is the Hot bird satellite which is in a slightly different direction than the sky satellite. If you are a sky customer that means you need a dish with two LNB's i.e. so that you can pick up signals from two directions at the same time.

Sky do not seem to do Italian channels; there is a possibility that you can get ITalian free-to-air channels in the UK, but it involves moving your Sky dish around; or you can get into motorised dishes etc..... but that is a bit too nerdy for me!
If you want to go this route, several companies will sell you a dish and box that will be dedicated to Italian FTA channels.
