Feijoas (pineapple guava) is also evergreen, as are guava and avocado trees (though very messy as they do shed leaves periodically).
I think almonds, or bitter almonds, are evergreen as they are used as a hedging plant back home.

Avocado Trees

I'd really like to plant a few of these. Are they easy to come by in Le Marche?

....I'm fairly sure that citrus trees are evergreen. We'll be looking to plant some additional fruit trees when we move so will be interested in any other responses. If I think of any others/come across any in my research, I'll let you know.
