I've skied loads of Italian resorts but as I've always been coming from the UK I've gone for the bigger and higher ones for the reasons given above.
I've only skied one day at Pila, during a holiday at Courmayeur. I can vouch for the comments. Lots of good food down in the valley in Aosta and prices are lower than the big resorts.
If you are organising it yourself plenty of cheap flights to Milano/Torino/Bergamo. Flying in to Bergamo you might also like to try Bormio. The snow above Bormio 2000 is usually ok and nice wide slopes for beginners.

When are you thinking of going skiing? A lot of the lower cheaper resorts run out of snow by end Feb. We used to live in Folgaria (pre-Dolomites) which has good skiing for beginners and the advantage of having cross country for those who don't take to downhill. However, Folgaria is a bit tame for serious skiers. Anywhere further north in the Dolomites-proper will have stunning scenery and very good chance of bright blue skies. In piedemont Pila is very good value and I know an excellent ski teacher there with good English (very unusal for Italian ski instructors). send me a private message if you want more details.
