Have any US citizens applied for an Italian Fiscal Code in the US? If so, how did you go about doing that and how long did it take to get your card?

My wife and I will be spending 4 nights in Torino in September. We already have Eataly and the Cinema Museum on our list of things to do while we’re there. Any other “ must-do, must-try” suggestions for us? This is our first visit.
I may be looking for a needle in a haystack, but when my wife and I were in Provence a couple of times we took a cooking class.
We will be staying about a 45 - 60 minute drive from Barolo. We plan to take a day and visit a few wineries in the Barolo/Barbaresco area and would prefer to hire a driver to drive the four of us to wineries that we choose.
I need some help figuring out how much cash (euros) to bring on my trip to Italy. I want to bring as little cash as possible and use credit cards whenever possible and avoid having to get additional euros while in Italy.
We will be vacationing in Santo Stefano Belbo (located between Asti and Alba) in early June, 2015. I am looking for some wineries to visit, preferably smaller ones that still employ traditional wine making techniques.

We have not completed a transaction yet, but are in the process of purchasing a home in Piemonte. We have agreed on a price but have not signed the Preliminary Purchase Contract yet. We are United States citizens and this is our first and probably only international real estate transaction. We have learned a great deal during this process which started in earnest in October, 2019 with a week long house hunting trip to the area.
I would be happy to share our experiences to date.
