7198 Borlotti Beans

I have picked some Borlotti beans today and was wondering if anyone had any recipes available. In my Jamie Oliver book, he says to simmer fresh beans for approx. 25 minutes. I was thinking of having them as a side dish with lasagna.
This is the first time that I have grown them and if they taste ok, then will try them again next year.

Boil beans, rinse, and while they're still warm dress them with rings from a fresh onion and a sauce of olive oil, vinegar, mustard, salt & pepper.

What I do with my borlotti is, cook them with some celery, carrot, a tomato and onion until almost soft. Then fry up some sausages that you have cut into rounds. Add these to the almost cooked beans and finish the cooking together. You can deglaze the cooking pan with white wine if you wish.

This is a traditional dish in Italy and a glamorous twist on beans and sausage.

I've found that they can be quite tough, so I boil them first for about 10 minutes, then add them to the tomato sauce and let them simmer for another 30 mins or so.

Thanks for the replies. They tasted very much like broad beans and went well with the lasagna. I have had only two pickings, but will definitely grow them again next year. :biggrin:
