9055 Seafood Lasagne

This is quite a nice way to eat lasagne amount of ingredients used will depend on the number of people .

Use mainly fresh seafood mussels prawns , clams or (cockles) and some sort of white fish merluzzo is fine .
Wash the shell fish thoroughly and steam them, the water you steamed them with strain and put to one side
With 5 fresh large ripe tomato's prepare a light sauce with olive oil ,.

crushed garlic and fresh parsly, dont over cook the sauce .
If you dont make pasta ( I dont ) buy it fresh from the pasta shop cook it in boiling salted water 2 or 3 pieces at a time for a few minutes , then take it out and place on a clean tea towel.
Prepare a decent sized oven dish put a little butter in the bottom of dish and use a fresh type white cheese ( not to strong & from cows milk) ) cut the cheese into small pieces and put some in the bottom with a spoonful of the sauce.
Then start with a layer of the pasta with sauce and cheese add some seafood and small pieces of the white fish . Repeat this till you have filled the dish, on top put an extra spoonful of the sauce and some extra cheese along with a few mussels or prawns
You can add some of the fish to the sauce as its cooking to give more flavour .
The sauce shouldn't be dense the lighter the colour the nicer it will be you can add a spoonful of the water from the steamed seafood to the sauce should it appear to dense .
Make sure you take the bones from the fish before adding it to lasagne .

I make a very similar one, but I combine the tomato-seafood layer with another one made of spinach in white sauce, condimented with white pepper and nutmeg. It is also delicious.

That sounds good I love nutmeg and spinach they go so well must try it !
