Hi Paula
"hough" is a good old Scottish term for shin of beef (or "hock" as I think the English say, as in "ham hocks"). To avoid confusion, that's the "[B]s[/B]hin" on the bottom of the leg, rather than the "[B]c[/B]hin" at the end of the jaw (bloody British spelling/pronounciation, eh!)
"Potted hough" is a traditional dish I remember from my childhood (my grannie would serve it up often) ... it involved cracking the shin bone open and then cooking very gently for several hours. The meat ws then separated from the bone, broken up & left to cool & set in the stock (using all that natural gelatine from the bone) so that it ends up set in jelly like a terrine. I didn't much rate it when I was a nipper, but age has taught me a thing or two :-)

I live in Fontaneto D'Agogna (NO) with my Italian wife. I moved out here four years ago and we married last year. Favourite things to do are a trip to Arona for ice cream or a motorbike ride up into the mountains in summer to catch a bit of cooler air. Oropo, Alagna, Mottarone, Cascate della Toce are all lovely spots to go for a wander.
Quite honestly though, we are both fairly content to stay at home. We are fortunate to have a large garden with pool and it's lovely just to spend time working on the house and garden, or even better relaxing with a cool drink.

What is an attrezzista? I am a bit confused...
In Piemonte my Husband and i love going to the mountains, we have a flat in Pragelato, in the way to Sestriere. I love Torino, the museums and the coffee bars, we love going to dinner at La Commedia Della Pentola ([url=http://www.lacommediadellapentola.it]La Commedia della Pentola - [Ristorante a Lu monferrato - Alessandria][/url]) and all the summer festivals in the countryside... we are based in Monferrato. Many things happening in our little village, a new B&B just opened!

An attrezzista is a properties manager in the theatre, or as in my case a person who makes, maintains and repairs the tools and dies that are the essential properties of our company. I create and maintain "attrezzi" - tools.
In short - a tool and die maker. :smile:

Thanks for the dinner tip - not a million miles from us, so may check it out. We are of course spoilt for choice on great places to eat in the Piedmont. Recently we tried a new (to us) spot on the hills abouve Acqui Terme - will do a review of it in due course.

Hi, I'm Italo-Belgian and live since a few months in South-Piemonte (Alto Monferrato).
We plan to open our agriturismo this summer, so at this moment we are very busy renovating. Our goal is to rent 4 mini-appartments and to grow organic herbs (lavender, rosemary, ...) and vegetables and sell them in our farm.
We love the peace and quiet here. You can walk in the woods behind our house without seeing anybody, there are a lot of great MTB tours, ...
Cooking is one of my new hobbies here and I discovered that I'm good at baking crostata's and quiches, which I never made in Belgium.

I'm from holland and since three years I live in the southerm part of Piemonte, In the very small village Olmo Gentile (The smallest commune of Italy). After three years of nonstop renovating we opened our Luxurious B&B this spring. And were lucky to be found by wonderful quest from all over the world.
We are surrounded by beautiful nature, vineyards, hazelnuts, we have truffels on our property and are next to the famous goat cheese village of Roccaverano. The last few years we tried to explore as much as we could, to find out a lot about the famous wines ect., but there is so much to see and to do that we're still discovering new beautiful places to visit each time we go out.
I there...I am from Piemonte and I live in Glasgow...but I go back home all the time. My Husband is scottish, but he just loves coming to Piemonte and his Mum and Dad bought a house there, that is just about ready after restoration.
I was brought up in torino but my family is from Monferrato, and that's where we spend most of our holidays.
One of Monferrato's and piemonte's traditional dishes is Bollito, boiled beef served with different sauces. You cannot find the right beef cut for bollito in a UK supermarket, so I asked my Italian Butcher to show me the cut, It is on the chin of the cow, just around the bone.
Off I went to my local butcher last week, explained what I needed and he gave just the right cut of beef. Our bollito was lovely, I served it with salsa verde and we had the broth-minestrina- as a starter. result!
