I have seen wheelchair access interpreted here as two burly waiters coming out and carrying the person in bodily, an unusual experience, but guess it depends on the waiter, could make the holiday?!.

It's not some much access to places as if it's not too horrendous he can shuffle in- it's more places without big hills (had a very interesting trip to Assisi) that we are looking for!!

Lecce is quite flat and would be easy to navigate with a wheelchair. Do you have a disabled badge - don't forget it - can work wonders.
Not much experience of Gallipoli as we are in Ostuni but I would avoid places like Ostuni as the centro storico is very, very steep and the old streets cobbled.
Also, restaurants serve very late, particularly on a Saturday night. Often quite difficult to get a meal before 8.30pm. If you have a long drive on Saturday may be better to break it up with a leisurely lunch and then you can get to bed at a reasonable time rather than having to hang around for restaurants to open. We have been turned away from totally empty restaurants at 9pm as they are fully booked - it seems usual to turn up at 11pm..

Have just got back & visited Lecce, Gallipoli, Otranto & Santa Naria di Leuca- all of which were easily accessible (there is a hill in Otranto up to the cathedral but it was easily pushable!). We decided to forgo the evening meal out on Saturday night but had lunch out most days-pizza at lunchtime- that doesn't happen round here!!!Most restaurants were still open but as I suspected some of the ones in the coastal towns were either closed or about to close for the end of the season

If its like where my place is 'up north', all restaurants are supposed to close one day a week, [presumably to give staff a day off]. Here they choose different days [usually Monday to Thursday] so there is always a reasonable choice of eateries available.
I doubt whether many will close for the winter, again [in north] a couple shut for a week or two's holiday, but most don't
