As I understand you you can do much of the building work yourself. You will need a geometra to inform the comune that you are going to do the work and a registered plumber and electrician to sign off the electrics and plumbing or heating.
Get quotes from a couple of Geometra for a 'DIA' (Dichiarazione di Inizio Attivita) for 'Straordinario Manutenzione' which should cover doing all the work on the roof, doors, windows, bathroom and kitchen as well as any internal works and decoration.
You should then state that you are doing the work 'in economia' which is to say you are going to organise it yourself and take responsibility directly. The geometra is still responsible to make sure what you do complies with EU regs but you can do the work.
Electrics and plumbing (in particular gas and heating) will require a 'certificato di conformita' at the end of the job so you need registered profesionals to do those.
Do not let anybody else on your scaffold, unless you are certified to put it up if somebody should fall off (even through not fault of your own) you will be responsible for damages.

Good questions, good luck with the rennovation. Does your comune have its technical information and application forms on its website? A useful place to start. Where are you near for salvage? Unless you're in a particularly favoured spot Liguria can be cold in winter - especially if there is one of those untypical cold snaps which have been around the last few years so I'd insulate and double glaze any part you can if you intend any winter use.
