I noticed about a year ago that Easyjet altered their insurance section so that you have to say no to their insurance twice (bit like Chris Tarrant on Who wants to be a millionaire "Is that your final answer"). I always check the amount when I go through to the next stage to make sure I clicked twice to remove it.
The insurance is the only one that could be overlooked whereas the other sections you have to put in what you want.
Play around with the site Sally until you have it sussed. It isn't so hard.

Cheers Tutti. We got there. I thought though that one item of hold luggage was free and one of Easyjet's attractions.

It is hold luggage is payable.
Just tried it - it can be done but its a bit of a palava
Speedy Boarding - just don't click on Add Speedy Boarding, and it won't be on the bill
Hold Luggage - change number of bags to 0 and hit 'update' - then no charge for hold luggage
Insurance - click 'Remove insurance' , then confirm and update [possible a couple of times] and it disappears.
