897 scouse

When we go to a new place like Italy we suddenly all start eating, hams, meats, cheese, olives, basically we all turn mediterrean overnight (hope I spelt that right, no spell checker).
We last week I offered to make our Italian neighbours a English who have lived in the village for zillions of years and know how to make every from mountain hams to the best verdichio I have every tasted.
In the forum we have all talked about not fogetting who we are, and in a recent Italy mag, there was a phrase, 'dont try and be to Italian' or something like that
From Liverpool I decided to make them a big pan of scouse. Thats mince meat or best fillet, spuds, carrots, mushrooms, tinned tomatoes, onion, in fact anything that tickles your fancy. Brown the meat, chuck in some water, seasoning 3-4 Oxo cubes which I bring over, I simmered it for a few hours and hey presto, scouse.
I served it in bug plates with some red cabbage, and you should of seen the stuff move. I have never seen scouse eaten so quickly. now everyone wants the recipe in the village
Morale of the story, we are British, they are Italains, they live in a great country, and have a great feeling of being a family, and we do have some good food ideas to share.

I'm of Knotty Ash origin and definitely will carry on making scouse even when we relocate but I have to make it just like my nan and make great big fluffy dumplins.

My mum also makes a mean Spanish omelete which is really quick and easy to make if your in a hurry and want to just throw something together with a few things out of the cupboard. Fry some chopped onions and chopped bacon (and mushrooms if you like) in a frying pan until lightly done. Put this into a pan with a tin of chopped tomatoes and processed pea's (with juice). Simmer for approx 15 mins. Make a plain omelete and then put the tomatoes and bacon mix on one half and fold over. Very taste.
