I love eggplant!
Unfortunately they dont grow too well in my garden but alas- I have a lot of swiss chard.
If you use the white stalks instead of eggplant it is also very good.
I usually boil the stalks for just a couple minutes and then give them an egg wash/breadcrumb dunk and fry them.
Tried this recipe last night - it was lovely - our guests were so impressed!! Thanks.
