Alex & Lyn
Forget the supermarket. Troccoli are best made "fatte in casa" like orecchiette and chiancarelle.
Anyway now that you are becoming "pugliesi" you should be starting to make your own fresh pasta. I remember watching my grandmother make fresh pasta at the family trullo in Martina Franca when I was very young. It is a memory that has never faded.
Ok charles , how do you make it then !!!!

Was up at 5am, racking ground in preparation for veggie patch and new path ! put washing out , having been up to village square and bashed it on some rocks !!..The washing is a joke..but not the raking !
Had a shower and went to market ( got dressed first !!). Didn't buy anything as I hate bartering !..I know but I can't help it ...and there were flies on fish and meat !!
Bought flour to make bread ..and now Charles wants me to make my own pasta...I will Charles , I promise, when I can find the time ..retired, I've never worked so hard !!!!
Any one know of a really good Italian cook book which goes back to basics ( i.e. how to make superb pasta )

Making Troccoli

They are made with durum wheat flour.
I am told that once you have made your dough you have to work it by hand until it becomes smooth and elastic. You have to roll the dough, cut it into strips and then draw it out as though you were making spaghetti, although Troccoli are more like strips of chunky, untidy spaghetti, which are not perfectly cylindrical in form.
ok -I'll give it a try

Couldn't find it in 2 supermarkets this morning anyway...now I think of it . recipe book I have doesn't tell you how to make it ...told you it was useless !!!
Sorry to revitalise an old thread and I know it's breaking the rules, but I guess tha's what rules are for.. and this thread is harmless enough.. I hope! :D
Anyway.. Alex and Lyn.. it's nearly six months now.. I'm dying to know.. did you make the ruddy stuff or not?
:) :)
I believe A&L got fed up with people appearing on threads and posting rubbish, so they rarely post nowadays...

Oh George.. I'm surprised to hear that.. are you sure, because posting rubbish is a crime many of us are guilty of.. I'm not sure about charging people as criminals for it though.. it'd be a harsh sentence for some.
They seem pretty active apart from the past couple of days.. maybe they have just gone out shopping or are having a weekend away somewhere nice.

Trulli and Aliena - can appear cruel in their humour sometimes but I am just beginning to detect an element of kindness in the cruelty.

Stodge, you need to come and play in hidden bit, the threads digressing now! Have a surprise for you. ;)
As far as I know it is a form of tagliatelle. We have tended to find that a wide range of pasta forms have different regional names in different places.
But, they're certainly tasty, aren't they?
