I dunno, that was (the other thing) I thought it could be(!) but there was this distinct star-fishy tenticle thing going on & despite only getting a C in O level biology, I can't remember anything like that inside a cow!

Heavens, I've just found out what it is, phew!

OK Tusk.. so it's the head.. which obviously makes sense.. testa.. and is very tasty.. but the bit that threw me off was the "doobreys and star-fish tenticles".
What are the doobreys and star-fish tenticles? Which part of the head? My cervello is boggling again! :D

The Testina is the whole meat of the head of a veal/beef.
It includes a lot of "gelly" and fat and less meat.
In Piemonte and Lombardia is considered a real delicacy!!
Are you sure it wasn't intestino? Intestines? A bit like chittlings.. actually.. exactly like chittlings..
