We share a fosse with our neighbours - the general rule for us is that if there is a smell of raw sewage in the street drains [where our fosse overflow goes to [this drain then flows into a nearby stream], then the fosse has stopped 'digesting' and needs pumping out [The local farmer does this and then spray it all over the field his cows graze in - his home produced cheese seems fine]
You can 'assist' the digestion process in a few simple ways to extend the time between cleanings -
1. don't use bleach or biological washing powders,
2. add a 'fosse booster' to encourage digestion [WC Net is the one we use - they also do bathroom cleaners suitable for use with fosses]
If you do this, they can go for years without pumping out
