748 Melanzane alla Parmigiana

This is a Sunday recipe, as it takes quite a bit of work.

You will need:
4 or 5 aubergines (melanzane)
salt
tomato sauce
garlic
basil
grated parmigiano reggiano
mozzarella cheese
olive oil

slice the melanzane 5mm thick. Put some salt on them and let them sweat for half an hour. Fy them in very hot olive oil and then pat dry them with kitchen towel. In the mean time make a nice tomato sauce: put some olive oil in a pan, fry two cloves of garlic, add two cans of hopped tomatoes, a pinch of sugar, 2 piches of salt, basil. cook on a medium heat for half an hour.
In an oven proof dish make layers of fried melanzane, tomato sauce, basil leaves, parmisan and sliced mozzarella. Do not add any olive oil. Bake in a hot oven ( 200 degrees) for half an hour, or until golden on top.
Best served a few hours later, or the day after.

I love eggplant!
Unfortunately they dont grow too well in my garden but alas- I have a lot of swiss chard.

If you use the white stalks instead of eggplant it is also very good.

I usually boil the stalks for just a couple minutes and then give them an egg wash/breadcrumb dunk and fry them.
