Hi, it's probably too late to reply to this question, but if you're still looking, there is a school in Modica I've heard good things about. They have residential cooking weeks but also offer shorter stays. Hope this helps!

Ciao,I can set you up with some Sicilain friend that are great cooks... they can teach you in person the real recipes and give you a fullimmersion in sicilian lifestyle. Drop me a message if you like -there is a great B&B outside Scicli and the owner gives cooking lessons - she has a blog called buccia di limone. Or near Ispica there is a Baronessa who will teach you old sicilain recipes to her guests at fortezza villa bruno - an amazing 10th century fortress.
