Recipe for a really good Pumpkin Soup

Having been given a huge orange pumpkin by a friend this recipe came to mind, its simple and delicious and hopefully something Gromit might enjoy!2 tbs olive oil1onion finely chopped1 garlic clove crushedhalf tsp ground coriander1 tsp ground cuminhalf tsp freshly grated nutmeg1kg peeled pumpkin diced1 large potato1L chicken or veg stockhalf a cup of thin creamMethodHeat oil in large saucepan, over a low heat saute onion for 3 mins until soft but not coloured. Add garlic and spices stir for 30secs. Add pumpkin, potato and stock and bring to the boil. Turn heat to low, cover and simmer for 30mins. Allow to cool slightly, then blend in batches.Return soup to pan, stir in cream and reheat gently. season to taste with salt and pepper and serve.Enjoy!A

Funny you should say that as I just bought some Pumpkin this morning with that very thought in mind. We use a similar method but no cream; what we do is use some Sweeet Potato as well as this thickens it slightly and give a wonderful sweetness to it; we still add the nutmeg. Try it with Butternut Squah if you can get it but it tends to be V expensive. mmmmmm ..soup and crusty bread for supper...

It sounds delicious, very similar to the recipe I use and cumin and nutmeg give that extra flavour. You can also add some Greek or Bulgarian yoghurt instead of cream (or sour cream if you find it....) Sweet potatoes are a great idea, if you can find them......

Great info, Gromit as I do some shopping at Esselunga Ponte a Moriano. But I had not seen them. Roasted lamb with baked sweet potatoes, pumpkin, carrots and potatoes with olive oil, rosemary and lemon juice will be great.
